Ingredients
Method
Techniques
- 1 whole burger bun
- 2 oz ground chuck
- Thousand Island style sauce
- pickles
- onions
Weigh two 2-ounce portions of ground chuck on a scale and form them into small balls.
- butter
Before cooking, toast the buns in butter, spread sauce on the bottom bun and put the toppings on the bottom bun.
Setting up the buns first
Heat a griddle or skillet, not nonstick, until smoking hot.
Place the balls and smash them as hard as possible with a trowel, twisting to release, until flat and thin.
Season the tops with salt and pepper, with all fans on, and cook about 45 seconds until browned.
Scraping up the crust and stacking
- salt
- pepper
Scrape the patties up with a wallpaper scraper under firm pressure to keep every bit of crust; they cook on one side only.
- 1 slices American cheese
Flip, lay a slice of American cheese on one patty and stack the other on top at once; no time on the second side.
