Techniques
- 1 tsp salt
- 2 cup shredded mozzarella
- 1–2 tsp finely chopped parsley
- 1 whole onion
- olive oil
Cook the finely chopped onion with a little olive oil in an ovenproof skillet over medium heat about 8 minutes, until soft and golden.
- 6 whole garlic cloves
Add the grated garlic and warm through until fragrant; do not let it burn, as burnt garlic is bitter.
- 2 lb ground beef
Add the ground beef, raise the heat to medium-high and cook just until no longer pink.
- freshly cracked black pepper
- crushed red pepper flakes
- 1–2 tsp dried oregano
- ¼ tsp cinnamon
- 1 can tomato sauce or crushed tomatoes
- water
Season with salt, black pepper, red pepper flakes, dried oregano and cinnamon; add the tomato sauce or crushed tomatoes, rinsing the can with a little water.
Add the bell peppers, mix, bring to a boil and cook a minute or two; take off the heat and add the shredded cheese.
Bake on the centre rack of a 400F oven about 20 to 25 minutes, until the cheese melts and turns golden.
Rest a little so the sauce thickens; top with finely chopped parsley. Optionally stir in chickpeas or beans before baking.
