  • ¼ cup all-purpose flour
  • 2 whole buns
Preheat the oven to 375.
A vegan take on a breaded fish burger
  • 1½ cup canned chickpeas
  • 1 tbsp white sesame seeds
  • 1 tbsp fresh dill
  • 1 tbsp crushed pepper
  • 1 tbsp soy sauce
  • 1 tbsp dijon mustard
  • 1 tbsp tahini
  • fresh lime juice
Combine the chickpeas, sesame seeds, dill, crushed pepper, soy sauce, dijon mustard, tahini and lime juice and mash; mashed chickpeas start to flake like tuna, and the tahini helps them bind.
Line a plate with flour. Roll the mixture into a patty and dust it in the flour.
In a frying pan over medium heat, stir the panko with a drizzle of olive oil until golden brown; spread on a plate.
  • ¾ cup panko
  • olive oil
  • water
Wet the hands with water and moisten the floured patties so the panko sticks; coat them in the panko.
Place the patties on a baking tray and bake 25 to 35 minutes.
  • lettuce
  • hot sauce
A few minutes before serving, toast the buns in a frying pan for a few minutes. Assemble with lettuce and hot sauce.
