Ingredients
Method
Techniques
  • 1 lb dried figs
  • 4 cup boiling hot water
  • avocado spray
Pour four cups of boiling water over the dried figs and leave them to soften while everything else is prepared.
  • 1 cup walnuts
Roughly chop the walnuts.
  • 400 g all-purpose flour
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
Whisk the flour, baking powder, salt, cinnamon and cloves together.
  • ½ cup olive oil
  • 1 cup tahini
  • ½ cup freshly squeezed orange juice
  • 1 tsp baking soda
  • 1 tbsp ground flax seeds
  • 3 tbsp water
  • 1½ cup granulated sugar
  • 3 tsp pure vanilla extract
Whisk the olive oil, tahini, orange juice, baking soda, sugar and vanilla together in one big bowl, then add the flax egg.
  • 1 cup fig water
Lift the softened figs out, cut off the hard stems and roughly chop them.
Fig cake batter
Add a cup of the fig soaking water to the wet ingredients.
Add the dry ingredients a little at a time, holding back a little flour to toss the walnuts in so they do not sink.
Switch to a spatula and fold in the walnuts and figs, then pour into the prepared pan.
Bake on the middle rack at 350F for about 35 to 45 minutes, until a toothpick comes out clean or with moist crumbs.
  • 1½ cup confectioner's sugar
  • orange juice
For the icing, stir one and a half cups of confectioner's sugar with three to five tablespoons of orange juice to a pourable but not see-through consistency.
Cool the cake completely, cut into portions and drizzle with the icing or serve it alongside; powdered sugar and shredded coconut are an alternative.
