  • 24 whole whole chicken wings
Break each whole wing down by cutting through the skin to the joint between the drum and the wing, breaking the joint and cutting between the bones, repeating with the tip.

  • salt
Pat dry, lightly salt and store on a wire rack set in a rimmed baking sheet, uncovered in the fridge overnight, to desiccate the skin.
  • 1 cup cornstarch
  • 2 tbsp flour
  • 1 tsp baking powder
  • 1 tbsp kosher salt
Whisk the karaage style dredge: a cup of cornstarch, two tablespoons of flour, a teaspoon of baking powder and a tablespoon of kosher salt.
Drop the chicken in the dredge and press and massage so every nook is coated.
  • instant mashed potatoes
Make a second dredge with the same formula but instant mashed potato flakes instead of cornstarch, pressing it firmly onto the chicken; a third batch uses both combined.
  • green hot sauce
  • butter
  • 1 tbsp wasabi paste
  • shishitos
The simplest sauce is store bought green hot sauce buffalo-fied with butter, at about two to one sauce to butter, plus about a tablespoon of wasabi paste adjusted after the butter goes in.

  • 6 whole jalapenos
  • 1 whole poblano pepper
  • 2 whole Italian frying peppers
For a homemade green hot sauce, take the stems off the shishitos, jalapenos, poblano and Italian frying peppers.
Broil at maximum power about five minutes per side until deeply charred but not blackened, removing any fully carbonized skin.
  • 4 cloves garlic
  • ½ cup distilled water
Blend the peppers with three or four garlic cloves and half a cup of distilled water into a paste.
Optional: fill a sanitized jar three quarters full with the paste, cover with cheesecloth or paper towel affixed to the jar, and ferment at room temperature for 7 to 21 days.
  • ½ cup sushi rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
To about two cups of pepper paste add half a cup of sushi rice vinegar and a tablespoon each of soy sauce and fish sauce, and blend as smooth as possible, adjusting with more vinegar until pourable.
  • 3 tbsp wasabi paste
Strain out solids through a fine mesh sieve, add two to three tablespoons of wasabi paste and taste for seasoning; add more vinegar for a Frank's-like consistency.
  • 2 quart peanut oil
Fry the wings in two quarts of peanut oil heated between 350 and 375 degrees Fahrenheit for five to eight minutes until golden brown and crisp.
Toss the plain-skin wings in the green pepper buffalo sauce; the potato coated wings are best unsauced because the coating softens.
