  • 1 can canned chickpeas
  • 1 clove garlic
  • lemon
In a food processor blitz the rinsed and drained chickpeas and a small garlic clove with a tiny squeeze of lemon for a second.
  • ¼ cup tahini
  • 2 tbsp olive oil
Add about a quarter cup of tahini and a couple tablespoons of olive oil; process about a minute. It looks creamy but is not done.
  • salt
  • ice
Add a good pinch of salt. With the motor running, drop in a handful of ice (or drizzle in ice water) and process until airy, fluffy and smooth.

  • extra virgin olive oil
Serve on a platter with the chicken and salad, a little more extra virgin olive oil on the hummus, lemon and the reserved dill.
