  • 2 can white beans
Drain the two cans of white beans in a colander and rinse.
  • ¼ cup fresh parsley
Finely chop the parsley and onion; roughly chop the garlic.
  • 1 whole onion
  • 8 cloves garlic
  • 60 ml extra virgin olive oil
Heat a large fry pan over medium heat with 60 ml olive oil; after a couple of minutes add the onion and garlic and saute about 4 minutes, stirring continuously, until the onion is slightly translucent.
  • 8 g all-purpose flour
Add 8 g flour and cook 2 minutes, stirring, to cook off the raw flavour.
  • 120 ml dry white wine
  • sea salt
  • freshly cracked black pepper
Add 120 ml dry white wine, the parsley, sea salt and black pepper; cook about 3 minutes until the alcohol cooks off and it forms a thick paste.
Cooking out the flour, then the wine
  • 480 ml vegetable broth
  • 1 whole bay leaf
Add the beans, 480 ml vegetable broth and a bay leaf; turn to high and mix gently until no lumps remain.
At a boil, cover, lower to low and simmer about 10 minutes, shaking the pan now and then to thicken the liquid.
Take off the heat and serve in a shallow bowl, with a crunchy baguette.
