Ingredients
Method
Techniques
  • 530 g white flour
  • 1 tsp salt
  • 1 tsp bicarbonate of soda
Preheat the oven to 190 degrees fan.
Mix the flour, salt and soda in a large bowl; rub in the butter until incorporated.
  • 30 g unsalted butter
  • 1 whole egg
  • 340 g buttermilk
  • oats
Whisk the egg and buttermilk together separately and pour into the dry ingredients, holding a little back.
Bring the dough together until soft but not sticky, adding the rest of the liquid if needed.
Turn onto a floured work surface and shape into a flat round.
Score a cross on top without cutting all the way through; make a hole in each quarter and top with the oats.
Bake 15 minutes.
Turn the heat down to 180 for another 25 minutes, or until it sounds hollow when the bottom is tapped.
Leave the bread to cool.
