Techniques
- 3 lb beef loin flap steak
Cut the steak into strips.
- ½ cup balsamic vinegar
- 3–4 tbsp olive oil
- 1½ tsp salt
- freshly cracked black pepper
- ½ tsp ground cumin
Season with the balsamic vinegar, olive oil, salt, black pepper and ground cumin; marinate right away or for an hour or overnight.
Set the air fryer to 400 degrees Fahrenheit and let it warm up for five minutes.
Air-frying the steak in batches
Cook the steak in about three batches so it does not steam: four minutes on one side, two minutes on the other, which gives medium to almost medium well. Four and one, or two and two, for less.
- 1 lb baby potatoes
Transfer the cooked steak to a platter and cover with foil.
Pressure-cooking the potatoes first
- 1½ cups water
- 1 tsp salt
Put the baby potatoes in an instant pot with about a cup and a half of water and a teaspoon of salt, pressure cook on high for two minutes, let it rest five minutes, then release the pressure.
- 1 whole onion
- 1 whole bell pepper
- 2 whole zucchini
Cube the onion, deseed and cut the bell pepper, cube the zucchini, and halve the cooked potatoes.
- 2–3 tbsp balsamic vinegar
- 2–3 tbsp olive oil
- salt
- crushed red pepper flakes
- black pepper
- 1 tbsp granulated garlic powder
Season the vegetables with balsamic vinegar, olive oil, salt, crushed red pepper flakes, black pepper and granulated garlic powder and toss to coat evenly.
Air fry the vegetables at 400 degrees Fahrenheit for about 10 or 12 minutes.
Air-frying the vegetables with feta
Serve with tzatziki, cauliflower rice or rice pilaf, or wrapped in tortillas or pitas.
