Techniques
Line the pan with crumpled parchment paper; angel food cake is extremely sticky.
  • 5 whole eggs
  • ½ tsp cream of tartar
Separate the eggs into a big bowl, add the cream of tartar and whip to stiff-ish peaks.
  • ¾ cup sugar
  • salt
  • vanilla
Beat in the sugar until the meringue is quite stiff; mix in a pinch of salt and a splash of vanilla.
  • 60 g flour
Cut and fold in the flour, scraping down the bowl, until homogeneous; overworking deflates the foam.
Pour into the loaf pan. Bake angel food only in narrow pans, loaves or tubes; too wide and it collapses in the middle.
Variation: instead of folding, beat the flour in with the electric mixer, stopping to scrape down the sides, about 25 seconds total until homogeneous; do not overdo it.
Bake about an hour at 350F / 180C.
Let the cakes cool, then unwrap them.
