Ingredients
Method
Techniques
- 2 whole jalapenos
- 1 whole onion
- 18 whole buns
- 4 lb chuck pot roast
- salt
- garlic powder
- black pepper
Pat the chuck roast dry and season on all sides with salt, garlic powder and black pepper.
- oil
Heat a little oil on the pressure cooker's saute setting (transcribed 'sausage setting'). Sear the meat 3 minutes per side, with the jalapenos and onion alongside, moving them around.
Transfer the meat to the pressure cooker pot. Mix the onions, scrape up the burnt bits and add them to the meat.
- 1 cup beef broth
Slice the jalapenos over the meat, add 1 cup beef broth, close and cook on high for an hour and a half.
Release all the steam. Transfer the meat to a skillet and shred it.
- barbecue sauce
Add a little of the cooking broth and the barbecue sauce, mix, and put in the oven for 20 minutes.
- cheese
Line the bottom buns with cheese on a greased baking sheet, top with the meat, drizzle more barbecue sauce, add the top buns and butter them.
