Techniques
  • 1 lb sirloin steak
  • ¼ tsp black pepper
  • 1 cup beef stock
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 4 cup broccoli florets
  • 2 tbsp neutral oil
Freeze the sirloin for 30 minutes to make slicing easier, then slice thinly, trimming extra fat, so it cooks quickly.
  • ¼ tsp baking soda
  • 2 tbsp soy sauce
Toss the steak with a measured quarter teaspoon of baking soda (a tenderizer; too much tastes bitter), black pepper and a couple tablespoons of soy sauce, mixing with tongs to disperse the baking soda; rest a few minutes.
Whisk the sauce: beef stock, soy sauce, oyster sauce, brown sugar and cornstarch.
  • rice
Prepare the broccoli florets, mince the garlic and start a pot of rice.
  • 3–4 cloves garlic
Heat a large skillet screaming hot with neutral oil; add the steak in a single layer and cook about a minute per side, until pretty much cooked through.
Add the garlic and cook about 30 seconds.
Add the broccoli and the sauce and cook about two minutes until thick and glossy and the broccoli is crisp and bright green.
Serve over rice.
