Techniques
- 300 g green beans
- ¼ tsp salt
- 1 tbsp diced garlic
- 6–8 whole dried red chilies
- 2 tsp toasted sesame seeds
- 300 g beef
Cut the beef into two pieces, then slice thin.
- ¼ tsp salt
- ¼ tsp garlic powder
- ¼ tsp ground black pepper
- ¼ tsp baking soda
- 2 tsp soy sauce
- 1 tsp dark soy sauce
Marinate with salt, garlic powder, black pepper, baking soda, soy sauce and dark soy sauce; mix thoroughly and set aside 15 minutes.
Trim the green bean tips with a knife (or snap and pull the fibres if they are tough) and cut in halves.
- 1½ tbsp vegetable oil
Over medium-low heat, add 1.5 tbsp vegetable oil, the green beans and the salt; saute patiently 8 to 10 minutes, tossing every 30 seconds or so, lid on if needed, until tender and slightly roasted.
Add diced garlic and seeded dried red chilies, bury them under the beans, and mix a couple of minutes until fragrant. Remove.

Return the green beans, mix, and sprinkle toasted sesame seeds and, optionally, Sichuan peppercorn powder; give a final toss.
