Techniques
  • bacon
  • vegetable oil
Cook the cut-up bacon in a heavy skillet on medium-high until the fat renders and it is crisp; move the bacon to the stew pot, keeping the fat.
  • beef chuck
  • salt
  • pepper
On high heat, brown the seasoned beef chuck cubes well in the fat; add to the stew pot.
  • 2 whole onions
  • salt
  • minced garlic
In the same pan on medium, sweat the onions with a big pinch of salt about 5 minutes; add the garlic and cook about a minute.
  • 1 can Guinness draft
Deglaze with the Guinness, scraping the bottom with a wooden spoon, 2 to 3 minutes on medium; add to the stew pot.
  • ¼ cup tomato paste
  • fresh thyme
  • carrots
  • celery
  • sugar
  • freshly ground black pepper
  • 2 cup chicken broth
Add tomato paste, thyme sprigs, carrots, celery, sugar, black pepper and chicken broth to just cover.
Bring up to a gentle simmer, cover and cook until fork tender, about 2 hours, stirring now and then.
Uncover, raise to medium-high and boil 15 to 20 minutes until reduced and slightly thickened.
Remove thyme stems, taste and adjust salt; serve with green onion mashed potatoes.
