Techniques
- 300 g beef
- 5 whole Thai bird eye chilies
- 40–80 g Thai basil leaves
Cut the beef into a few big pieces, then slice against the grain to shorten the fibres for a more tender texture.
- ¼ tsp white pepper
- ¼ tsp garlic powder
- ¼ tsp baking soda
- ½ tbsp soy sauce
Marinate with a quarter teaspoon each of white pepper, garlic powder and baking soda and half a tablespoon of soy sauce; mix thoroughly.
- cooking oil
Drizzle with cooking oil and stir to coat, so the slices separate during stir-frying; set aside.
Crush five cloves of garlic and 1.5 inches of ginger, peel and dice; dice the Thai bird eye chilies.
- 5 cloves garlic
- 1½ inch ginger
Heat the wok on high until smoking; add a drizzle of oil and swirl to coat the bottom.
Add the ginger, garlic, chilies and beef; stir over high heat about two minutes, until the beef just changes colour.
- oil
- 1 tbsp oyster sauce
Season with a tablespoon each of oyster sauce and fish sauce and mix quickly.
