Techniques
- 3 whole guajillo chilies
- 4 whole ancho chilies
- 4 cups boiling water
Place the guajillo and ancho chilies in a large heat-proof bowl and pour the boiling water over. Soak 45 minutes.
- 2 tbsp veggie oil
Set a big pot or Dutch oven over medium high heat and add the vegetable oil.
Sear the beef in batches without crowding, about two minutes a side, until it browns and releases from the pan. Set aside to rest.
- 2 whole carrots
- 1 whole onion
- 8 whole tomatoes
- 6 cloves garlic
Dice the carrots and the onion. Slice the garlic.
Add the carrots and onion to the pot and cook, stirring frequently, seven to eight minutes until tender and browned in the beef drippings.
Browning the vegetables and blooming the spices
- 1 tsp Mexican oregano
- 2 tsp cumin
Add the tomatoes, garlic, Mexican oregano and cumin and cook, stirring constantly, two minutes, scraping the caramelized bits off the bottom.
- 4 cups beef broth
Add the beef broth. Blend the softened chilies with their liquid and add the puree to the pot.
- 1 whole cinnamon stick
- 2 whole bay leaves
Add the cinnamon stick, bay leaves and the seared beef, and bring to a boil over medium heat.
Reduce to low and simmer three to three and a half hours, until the meat is fork tender and reads 205 to 210F at the thickest point.
- tortillas
Transfer the meat to a dish and pull it apart with two forks.
Let the pot stand so the rendered beef fat floats to the top, and dredge the tortillas through it on both sides.
- 2 tbsp shredded cheese
- ¼ cup shredded beef
Cook a dredged tortilla about 30 seconds, flip, add the cheese and about a quarter cup of shredded beef.
Crisping the cheesy tacos
Fold and cook 30 seconds to a minute more until crispy, with visible caramelization and browning.
Serving with consomme for dipping
- diced onions
- cilantro
- lime wedges
- radishes
Serve with diced onions, cilantro, lime wedges, sliced radishes and a bowl of the warm broth for dipping.
