Techniques
  • 3 lb steak
  • ¼ cup olive oil
  • 4 whole limes
  • 2 whole oranges
  • ½ cup chopped cilantro
  • ½ whole white onion
  • 1 whole jalapeno
  • 2 cloves minced garlic cloves
  • 1½ tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp New Mexico chile powder
  • 1½ tsp garlic powder
  • 1½ tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp dry oregano
For the marinade, mix the olive oil, the juice of the oranges and limes, minced garlic, cilantro, sliced onion and jalapeno and all the spices; taste and adjust.
Mixing the marinade
Put the thin ranchera (flap) steak in a bag or bowl, pour over the marinade and mix to coat.
Seal, removing all the air, and refrigerate at least four hours; overnight is best.
Grill over an open fire three minutes per side; repeat with the remaining meat.
  • chiles
  • cebollitas
Grill chiles and cebollitas alongside.
Serve on a plate with nopal, the grilled cebollitas and chiles, guacamole, salsa verde and salsa roja, flour tortillas, a cold salad, rice and beans; or in tacos, burritos or tortas.
