- 2⅔ cup all purpose flour
- ½ tsp sugar
- ¼ tsp garlic powder
- 1 tsp salt
- ½ tsp yeast
- 2 tbsp olive oil
- 1 cup warm water
Mix the flour, sugar, garlic powder, salt and yeast in a bowl by hand, then add the olive oil and the warm water and slowly bring it together.
Knead three to five minutes until soft, smooth and no longer sticking to your hands, adding a little extra flour if it does.
Cut the dough in half, roll each piece into a ball, wrap loosely in plastic wrap and refrigerate at least two hours.
- 2 whole limes
- 1 whole orange
- 2 tbsp olive oil
- 1 tbsp Maggi seasoning
- ½ whole onion
- chopped cilantro
- 1 cloves garlic
In a Ziploc bag, combine the juice of two limes and one orange, two tablespoons of olive oil, a tablespoon of Maggi seasoning, half an onion, a handful of chopped cilantro and one garlic clove.
- 1 tsp salt
- ¾ tsp garlic powder
- ¾ tsp onion powder
- ½ tsp black pepper
- ½ tsp chili powder
- ¼ tsp ground cumin
- ¼ tsp oregano
Add a teaspoon of salt, three quarters of a teaspoon each of garlic powder and onion powder, half a teaspoon each of black pepper and chili powder, and a quarter teaspoon each of cumin and oregano; mix.
- 1½ lb flat steak
Add a pound and a half of flat steak, coat it in the marinade, close the bag and marinate.
Pull the dough and meat out of the fridge about an hour before cooking to come to room temperature.
- 3 tbsp olive oil
Heat three tablespoons of olive oil in a small sauce pan over medium heat, add a quarter of a finely chopped small white onion and saute a couple of minutes.
- ¼ whole small white onion
- 2 cloves garlic
Add two minced garlic cloves and saute 30 seconds, then add 28 ounces of crushed tomatoes and mix.
- 28 oz crushed tomatoes
- 1 tsp oregano
- 1 tsp salt
- ½ tsp crushed pepper
- ¼ tsp cayenne pepper
Season with a teaspoon of oregano, a teaspoon of salt, half a teaspoon of crushed pepper and a quarter teaspoon of cayenne, bring to a simmer, taste for salt, then reduce to the lowest setting and simmer 10 minutes.
Cook the steak on a hot skillet about four minutes a side, then rest it covered in a bowl; cook the second piece the same way.
After 10 minutes take the cast iron out, lay the dough on it and poke it sideways with a fork or toothpick.
