Techniques
  • 2 lb steak
  • 2 tsp chili powder
  • 1½ tsp onion powder
  • 1½ tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 1 tbsp salt
  • 2 tsp black pepper
  • 2 orange orange juice
  • 4 lime lime juice
  • ¼ whole chopped onion
  • ¼ cup cilantro
  • 2 cloves minced garlic
Season the cubed steak with chili powder, onion powder, garlic powder, ground cumin, oregano, salt and black pepper and mix well.
  • avocado oil
Add the orange juice, lime juice, avocado oil, chopped onion, cilantro and minced garlic and mix until coated. Cook a small piece to check the salt.
Cover and marinate overnight, or at least 30 minutes.
  • tortilla triangles
  • oil
Deep-fry the tortilla triangles in hot oil a couple of minutes until golden; remove and drain off as much oil as possible.
In the same skillet over medium-high heat, cook the meat in batches a couple of minutes so it grills rather than boils; check it is done and repeat with the rest.
Cooking the carne asada in batches
  • refried beans
  • queso Oaxaca
  • medium cheddar cheese
Layer chips, refried beans, the queso Oaxaca and cheddar mixture and the carne asada; repeat with another layer of chips, beans, cheese and meat, and finish with more cheese.
Layering the nachos
  • crema mexicana
  • pico de gallo
  • guacamole
Spread crema mexicana over the top and finish with pico de gallo and guacamole.
