Techniques
- flank steak
Layer the flank steak between pieces of plastic wrap and pound it a little thinner so it cooks evenly and is tenderized.
Pounding the flank steak
- 1 whole orange
- olive oil
- oregano
- salt
- pepper
- 2 cloves garlic
In a measuring cup, mix the juice of an orange, olive oil, a pinch of oregano, salt and pepper; grate in two large garlic cloves.
- cilantro
Use a vessel just big enough for the meat; pour some marinade in the bottom, add the steak, chopped cilantro and about a whole chopped jalapeno, then the rest of the marinade.
- 1 whole jalapeno
Marinate several hours; overnight is possible but the acid can start to break down the meat.
- tomatillos
Preheat the oven to 400F. Char the tomatillos in a dry cast iron pan on the cooktop until they develop color top and bottom.
Charring tomatillos in cast iron
- 1 whole small onion
- jalapenos
- 3 cloves garlic
Add the quartered small onion, the halved jalapenos and three garlic cloves once the tomatillos have color, without oil or water.
Roast in the 400F oven about 20 minutes, until the tomatillos are tender and cooked through.
- chicken bouillon powder
- fresh lime
- cilantro
Cool slightly, then blend with cilantro, a hefty spoonful of chicken bouillon and fresh lime; taste and add salt or bouillon; thin with a couple tablespoons of water if thick.
Chill the salsa covered until needed so the flavors meld.
Cook the whole flank steak in a very hot grill pan under a cast iron weight about 4 minutes per side ('4 and a half minutes per side should be absolutely perfect').
Slice thin against the grain, cutting into small bites if wanted; toast the tortillas.
- corn tortilla
- fresh onions
Serve on corn tortillas with the salsa, fresh cilantro, onions and lime.
