Techniques
  • 4 whole tomatoes
  • 1 whole small onion
  • chiles serranos or jalapenos
  • piece of onion
Roast the serranos or jalapenos with the tomatoes and the piece of onion until charred all around.
  • chile de arbol
Turn off the heat and lightly toast the chile de arbol until fragrant, without burning.
  • 3 cloves garlic cloves
  • ½ tsp oregano
  • ground cumin
  • chicken bouillon
Blend the roasted tomatoes, chiles, chile de arbol and onion with the garlic, oregano, cumin and chicken bouillon to taste until crushed.
  • oil
  • 2 lb tough brown steak
Heat a little oil in a pan over medium-high; add the steak cut in small strips, season with salt and black pepper and let it brown until it releases its juices.
  • salt
  • black pepper
  • 3 whole small diced potatoes
Add the diced potatoes and the onion and cook, stirring, about five minutes until the juices evaporate.
  • 1 cup water
Add the salsa and the water rinsed through the blender cup; mix and bring to a simmer, then taste for salt.
Cover, reduce to medium-low and cook about 10 to 12 minutes until the potatoes are tender.
Serve, with homemade flour tortillas and refried beans if wanted.
