Ingredients
Method
Techniques
  • 50 oz crushed tomatoes
  • ½ tsp oregano
  • ¼ tsp red pepper flake
  • 1 tbsp garlic paste
  • kosher salt
  • pepper
  • olive oil
Marinara: combine the crushed tomatoes, oregano, red pepper flake, garlic paste, kosher salt, pepper and olive oil in a small pot and mix.
  • sugar
Add the sugar, mix, and bring to a boil.
Lid it, turn down to a simmer and leave about 20 minutes until thickened and much sweeter.
  • 3 pieces prosciutto
  • cooking spray
Spray two small racks; lay the prosciutto on one and set the second on top to stop it curling.
Bake at 350 about 25 minutes until crisp.
  • 2 cup arugula
  • ½ cup parmesan cheese
  • pine nuts
  • ½ whole lemon
  • salt and pepper
  • ½ cup olive oil
  • squeeze garlic
Pesto: blend the arugula, parmesan, pine nuts, lemon juice, salt, pepper and olive oil; taste, add a little more oil and the squeeze garlic, and blitz again.
  • ⅓ lb ground beef
  • oil
Press the ground beef into a lightly oiled deli container, level it, turn out onto parchment and flatten a bit; season.
  • seasoning
Grill the patty, turning a little each way for marks, about a minute and a half per turn, then flip; season again.
  • bun
Toast the bun; spread plenty of pesto on both halves, more on the bottom.
Building the burger
  • baby arugula
  • burrata
Add the patty, the marinara jam, arugula dressed with a little olive oil, salt and pepper, torn burrata and the crispy prosciutto.
