Techniques
  • 3–4 lb Korean style beef short ribs
Rinse any powdery bone gunk off the cross cut ribs; it tastes bad and stops the meat absorbing the marinade.
Rinsing off bone dust
  • 100 g soy sauce
  • 10 g salt
  • 3 g black pepper
  • 50 g brown sugar
  • 25 g sesame oil
  • 25 g mirin
  • 30 g garlic cloves
  • 10 g sliced ginger
  • 100 g chopped onion
  • 50 g kiwi
  • 150 g Asian pear
Into a blender put the soy sauce, salt, black pepper, brown sugar, sesame oil, mirin, garlic, ginger, onion, kiwi and Asian pear.
Blending the marinade
  • 1–2 g powdered meat tenderizer
  • 25 g pineapple
Blend on high about a minute until super smooth, and longer than you think, or the fibre will not hold the fat and water together and it will leach out on the grill.
Pour a layer of marinade into a shallow pan, lay in the ribs three or four wide, brush more over, then a second layer of meat and the rest of the marinade.
Cover and refrigerate to marinate 12 to 24 hours, or at least four hours.
Preheat the grill to 500 to 600F, hotter than needed, because cold wet meat will drop it.
Preheating and oiling the grill
  • pan spray
Spray or wipe the grates liberally, as the sugary meat sticks badly.
Lay the ribs down quickly, letting a little marinade drip off.
Close the lid and cook three to four minutes over medium high to char the first side and start the sugar caramelizing, checking every minute on a very hot grill.
Flip and brush with more marinade; at 450 to 500F it pasteurizes almost instantly, or reserve 10 percent before it touches raw meat.
Turn the heat down to about medium and grill six to eight minutes more, flipping three or four times, to lacquer the meat with the caramelized sugar.
Pull each piece when the beef fat has rendered and the sugar has caramelized, moving over-dark pieces to the coolest part; about 10 to 12 minutes of total cook time.
Rest briefly and cut between the bones with scissors into individual pieces.
