Techniques
  • 2 breasts chicken
  • 3 whole poblano peppers
  • ¼ whole onions
  • 4 whole radishes
  • 2 cup apple cider vinegar
  • garlic
  • 2 whole limes
  • white pepper
  • cumin
  • smoked paprika
  • oregano
  • cayenne pepper
  • olive oil
  • salt
  • freshly ground black pepper
  • sugar
Butterfly the chicken and place in a bag. Whisk a marinade of a few cloves of chopped garlic, juice of two limes, a shake each of white pepper, cumin, smoked paprika, oregano and optional cayenne, a drizzle of olive oil, salt, black pepper and a little sugar to help browning.
Add the marinade to the bag, massage, set in a bowl and refrigerate 1 to 4 hours.
Char the poblano peppers directly on the stove grate until black, wrap in foil 10 minutes to soften, then peel off the blackened skin.
Slice the peppers into strips and cut crosswise into bite-sized pieces.
Scrub, wash and thinly slice the radishes into a heat-proof bowl and pour boiling apple cider vinegar over; quick pickle about an hour, until cooled.
  • olive oil
  • dried oregano
Soften onions in a little olive oil in a non-stick pan, add the roasted poblano strips and a little dried oregano.
  • ¼ cup heavy cream
  • ½ whole lime
  • salt and pepper
Add about a quarter cup of heavy cream and the juice of half a lime to the poblanos; simmer about 5 minutes until thickened, and season with salt and pepper.
Cook the butterflied chicken in a ripping hot pan, flipping, without letting it go over 165.
Rest the chicken, then cut into pieces that fit a taco.
  • cotija cheese
Fill tortillas with chicken strips, top with rajas con crema, pickled radishes and cotija.
