  • 3 cloves garlic
Mash the garlic cloves with a chef's knife, remove the skins and put the cloves in a large bowl.
Mixing the adobo marinade
  • 3 g dried oregano
  • 4½ g sweet smoked Spanish paprika
  • 2½ g ground cumin
  • 8 g sea salt
Add the dried oregano, sweet smoked paprika, ground cumin and sea salt.
  • 1 cup sherry vinegar
  • 1 cup water
Add the sherry vinegar and the water, break in the bay leaves and mix until well combined.
  • 2 whole bay leaves
  • 3 whole cod fillets
Pat the cod fillets completely dry on paper towels and cut them into large bite-size pieces.
Add the cod to the adobo and turn it so every piece is coated; add a little more water if more liquid is needed.
Cover the bowl and marinate in the fridge for at least 2 hours, up to 8 hours.
  • ½ cup extra virgin olive oil
Heat a large fry pan on medium with the extra virgin olive oil.
  • ½ cup all purpose flour
Drain the bowl into a colander, lay the cod on paper towels and pat the pieces completely dry.
  • black pepper
Coat each piece of cod evenly in the flour seasoned with black pepper.
Fry the cod in the hot oil in a single layer, evenly spaced, about 3 minutes per side until golden and cooked through.
Lift the cod out onto a dish with paper towels after a total of 6 minutes.
  • fresh parsley
Transfer to a serving dish and garnish with fresh parsley.
