Techniques
  • good olive oil
  • 2 cloves garlic
Warm a little olive oil in a pan with two cloves of garlic for about a minute over low heat; lift the pan off if it gets too hot.
  • sun-dried tomatoes
  • chicken stock, or broth
  • heavy cream
Add chopped sun-dried tomatoes and mush them, then chicken stock and heavy cream; mix and bring to a little simmer.
  • parmesan
  • salt
  • pepper
  • store-bought dough
Add a lot of parmesan, then season with salt and pepper; mix and pull off the heat.
Cut the store-bought dough roughly in half and form a ball; after about two and a half hours out of the fridge it should not be so elastic. If it is, let it relax three or four minutes, then stretch to about 12 inches.
  • flour
Flour the board and lay the dough on it; check it slides so it will come off onto the pizza stone.
Keeping the pizza sliding
Heat the pizza stone in the oven for about an hour at 500 degrees.
  • shredded mozzarella
  • shredded chicken
  • red pepper flakes
Spread sauce on the base without too much, scatter the sun-dried tomatoes evenly, then shredded mozzarella and shredded chicken; check it still slides.

Sprinkle red pepper flakes, then bake 8 to 12 minutes until brown and bubbly and the crust looks perfect.
  • whole little basil leaves
  • good extra virgin olive oil
Decorate with whole basil leaves, cut, and finish with a little extra virgin olive oil and parmesan.
