  • 5 whole large Yukon gold potatoes
Peel the potatoes and cut into half-inch cubes for even cooking.
Par-fry at about 250F until just starting to turn blonde, about 5 minutes.
Spread on paper towels to drain and cool completely, about 30 minutes.
Rice the potatoes into a large bowl.
  • 3 tbsp all-purpose flour
  • 1 whole large egg
  • 1 cloves garlic
Add the flour, the egg and the grated garlic.
  • ½ cup pine nuts
Process the pine nuts and add with kosher salt and black pepper; mix by hand until smooth and homogeneous.
  • kosher salt
  • freshly ground black pepper
Press into puppy paw molds and freeze 1 hour to firm up.
  • 6 whole large Roma tomatoes
  • ½ cup sugar
  • 1 whole lemon
  • ½ tsp red pepper flake
  • 1 tsp apple cider vinegar
  • 1–2 inch freshly grated ginger
Tomato jam: cut the tomatoes into one inch pieces into a large saucepan with the sugar, lemon juice, red pepper flake, cider vinegar, grated ginger and cumin seed.
  • 1 tsp whole cumin seed
Bring to a simmer and cook 20 to 40 minutes until thick and jammy; let cool.
  • 3 cloves fresh garlic
  • 1 whole egg yolk
  • ¾ cup neutral flavored oil
Aioli: mash the garlic, add the egg yolk and mash until smooth, then add the neutral oil to make a mayonnaise-like white sauce.
  • broccoli
Steam broccoli about 5 minutes.
Press the paws out of the silicone molds and fry them a second time.
Stack on a plate with the aioli; serve with the tomato jam and broccoli.
