Techniques
- 2 tbsp olive oil
- garlic and herb
- salt
- pepper
Season the chicken breasts well on both sides with garlic and herb seasoning, salt and pepper.
- 4 whole chicken breast
Heat olive oil in a large cast iron skillet until really hot. Add the chicken and cook until almost fully cooked through.
Cooking the chicken
- ½ whole yellow onion
- garlic
Thinly slice half a yellow onion and scatter it around the chicken with some garlic; keep the heat moderate so nothing burns, then crank it up a little.
- barbecue sauce
- Monterey Jack
- strong cheddar
- tomatoes
- cooked bacon
- scallions
Prepare the toppings: shred Monterey Jack with a little strong cheddar, dice tomatoes, crumble cooked bacon and cut up scallions.
When the chicken is cooked through, brush it with a little barbecue sauce and top with the cheese.
- 2 tbsp water
Add a couple tablespoons of water to the skillet (or a couple of ice cubes) to create steam and melt the cheese in the skillet.
