Techniques
- 1 whole Costco prime brisket
Trim and season the brisket as usual.
Smoke; after about two hours the bark is reddish and the fat still bounces like a rubber ball, so keep cooking to render the fat.
- apple cider vinegar
- water
When it needs spraying, spray with a 50-50 mix of apple cider vinegar and water.
Wrap the brisket in butcher paper, then set it in a foil boat: paper on top for breathability, foil underneath for protection.

Finish cooking; it finished two hours after going into the foil boat, against four to six extra hours for butcher paper alone.
Rest in a cooler overnight (said as 'rest for eight hours' at 3:31 and 'we let rest 10 hours' at 3:43); internal temperature 150 when unwrapped.
Check the fat: sticky on gloved fingers means well rendered; slimy means water mixed with fat.
- salt
- pepper
Slice, tasting the end cut first as the driest part, then the point.
