Tacos de bistec (griddled beefsteak tacos)

Use very thinly cut beef (minute, breakfast or sandwich steak from a regular grocery store).

Salt it well, sear on both sides on a very, very hot griddle, then chop it into tiny bits; return it to the fire to cook completely well done if wanted, for texture.

Reheat the tortillas on the greasy griddle and top them with the meat.
