  • coffee
  • sugar
For a dry caramel, heat sugar in a hot frying pan at full blast with no water.
Cook until it begins to smoke and turns amber, without letting it burn; it goes brown fast.
  • hot cream
Deglaze the caramel with hot cream and turn off the heat.
Cool the caramel sauce and transfer to a squeeze bottle.
  • melted gelatine
Add the melted gelatine to the coffee-infused cream and pass through a sieve.
Fill the cups, about four ounces per serving, and refrigerate overnight to set completely.
Just before serving, add a thin layer of lukewarm caramel sauce on top.
