- 1 whole egg yolk
- 1 tbsp distilled vinegar
- 1 tbsp diced white onion
- 1 tbsp sliced pickled yellow chilies
- 1 tbsp chopped cilantro
- 1 tbsp smoked paprika
- 5–6 whole chicken drumsticks
- 2 tbsp thyme
- 2 cup all-purpose flour
- 2 tbsp paprika
- 3–4 whole eggs
- Dijon mustard
In a small bowl, stir together the egg yolk, Dijon mustard and distilled vinegar.
- vegetable oil
Drizzle in the vegetable oil slowly while whisking constantly until it starts to thicken, then increase the pour until the mayo is finished; chill a few hours to set it firmer.
- Dijon mustard
- chili powder
- cayenne
Mix more Dijon with the mayo, diced white onion, sliced pickled yellow chilies, chopped cilantro, smoked paprika, chili powder and cayenne; refrigerate until serving.
Building the spicy dipping sauce
- salt
- cracked black pepper
Season both sides of the drumsticks with salt and cracked black pepper.
- rosemary
- sage
- crushed corn flakes
- chili powder
- cayenne pepper
Chop rosemary, thyme and sage; mix into the all-purpose flour with crushed corn flakes, paprika, chili powder and cayenne until evenly dispersed.
Coat each drumstick generously in the seasoned flour and set on a rack over a sheet tray.
- milk
- salt and pepper
Whisk the eggs with a splash of milk, salt and pepper; dip the dredged drumsticks in egg and then in the seasoned flour again. Do not crowd the bowls; work in smaller batches.
- veggie oil
Fry in batches in a large pot half full of vegetable oil at about 375F, 12 to 15 minutes depending on size.
