Combine 12 ounces of raspberries in a medium saucepan with two and a half ounces of sugar and about the juice of half a lemon.
- 12 oz raspberries
- 2½ oz sugar
- ½ whole lemon
Cook until the raspberries break down with the sugar and heat and no big chunks are left, then take off the heat.
- 1 whole powdered gelatin
- ½ oz sugar
Combine a packet of powdered gelatin with about half an ounce of sugar, sprinkle it over the warm raspberry mixture and stir it in so it dissolves properly.
- 180 g whole eggs
- 140 g egg yolks
- 240 g whole milk
- 1 tbsp vanilla paste
Whisk 180 grams of whole eggs, 140 grams of egg yolks, 240 grams of whole milk and one tablespoon of vanilla paste together in a large bowl.
- 550 g cake flour
- 550 g sugar
- 1 tbsp baking powder
- 2 tbsp kosher salt
Combine 550 grams of cake flour, 550 grams of sugar, a tablespoon of baking powder and two tablespoons of kosher salt in a stand mixer until smooth.
Mixing the yellow cake
Mix the dry ingredients with 340 grams of softened unsalted butter until pebbly, almost as if making a pie crust.
- 340 g softened unsalted butter
Add the liquid a third at a time, in three additions, until fully incorporated.
Bake in a 350 degree oven until done, around 60 to 70 minutes.
Check the centre is done, flip the cake out and trim off any of the top that is not a perfectly flat edge.
Unmolding and trimming square
- 2 oz water
- 7 oz sugar
Combine 2 ounces of water with 7 ounces of sugar in a pot and bring to a boiling point for the syrup.
- 6 whole egg yolks
Once the syrup is warm rather than hot, pour it in while whipping the yolks; whip on medium high until the mixture has cooled to room temperature.
- 4 whole unsalted butter
Slowly add about four sticks of room temperature unsalted butter, waiting for each addition to be absorbed before adding more.
- 1 tsp vanilla extract
- ½ tsp salt
Flavour the buttercream with about one teaspoon of vanilla extract and half a teaspoon of salt.
Spread the buttercream over the cake, working it into as clean and sharp a square as possible.
Frosting to sharp cube edges
Chill and freeze the cake about an hour to let the frosting set, then cut back into it for clean sharp edges.
Cut the set berry sheet into squares and place them on top, slicing and nudging carefully to keep them square.
