- Filipino cane vinegar
- black pepper
- bone in skin on chicken thighs
Marinate the chicken thighs in the soy sauce, cane vinegar and plenty of black pepper for about 20 minutes.
Choosing the soy sauce and vinegar
- onions
- water
Saute the onions over quite low heat until soft, browned and caramelized; deglaze with a little water if brown bits build up before they soften.
- chopped garlic
Add the chopped garlic and cook a couple of minutes to infuse the oil.
- oil
Push the onions aside; shake off the marinade and sear the chicken skin side down about a minute until browned.
Pour in all the marinade, turn the heat down, flip the chicken so the meat is submerged, and add water to just under the skin.
- bay leaves
Bring to a gentle simmer, cover with a tight lid, lower the heat and cook 30 minutes or until fork tender, flipping halfway; add bay leaves.
Flip the chicken back, turn the heat to high and reduce the sauce a few minutes, basting, until darker, richer and thicker.
- chopped cilantro
- jasmine rice
Taste; sprinkle with chopped cilantro and serve with jasmine rice.
