Chop the onions, garlic, parsley, dill and mint very fine in a food processor.
  • onions
  • garlic
  • parsley
  • dill
  • mint
  • ground beef
  • salt
  • pepper
  • dried oregano
Add to the ground beef with salt, pepper and dried oregano and mix very well.
Roll into small balls and flatten into patties; chill on a plate in the fridge about 10 minutes.
  • 1 whole regular cucumber
Grate the cucumber along its sides, avoiding the seedy core, and squeeze out the excess liquid.
  • garlic
In the same processor, chop a little more garlic and the fresh herbs very fine.
  • fresh herbs
  • ½–1 whole lemon
  • whole Greek yogurt
  • salt
  • 1 tbsp extra virgin olive oil
Mix the cucumber, garlic and herbs with half or a whole lemon, whole Greek yogurt, salt and about a tablespoon of extra virgin olive oil; it improves as it sits in the fridge.
  • olive oil
Cook the patties in a skillet with a little olive oil a couple of minutes on each side until golden brown.
