  • 1 whole onion
  • oil
Cook the finely chopped onion in a little oil over medium heat until soft and golden, about eight minutes.
  • 6 cloves garlic cloves
Add the six grated garlic cloves and warm through until they melt into the onions.
  • 2 lb ground beef
Add two pounds of ground beef and cook over medium heat until most of the pinkness goes.
  • salt
  • freshly cracked black pepper
  • 1 tsp sweet paprika
  • crushed red pepper flakes
  • 1 tsp ground cumin
  • 1 tsp ground coriander
Season with salt, freshly cracked black pepper, a heaping teaspoon of sweet paprika, crushed red pepper flakes, a teaspoon of ground cumin, a teaspoon of ground coriander, one to two teaspoons of dried thyme and a few splashes of Worcestershire sauce.
  • 1–2 tsp dried thyme
  • Worcestershire sauce
Cook over medium to medium high heat, mixing, until the meat is fully cooked, about 10 to 15 minutes.
  • ½ whole onion
  • 1 whole bell pepper
  • grape tomatoes
  • 1 whole avocado
  • lemon juice
  • olive oil
  • salt
  • serrano or jalapeno
  • lime
  • cilantro
For the salad, chop half an onion, a bell pepper and lots of grape tomatoes, add an avocado, lots of lemon juice, a little olive oil, salt, lots of lime and finely chopped cilantro, and mix.
  • corn tortillas
  • shredded cheese
Lay corn tortillas on a cutting board, sprinkle a layer of shredded cheese, top with the ground beef, a little more cheese and another tortilla, and press down.
Assembling and crisping the tortillas
  • olive oil
Cook in a cast iron skillet over medium heat with a tiny bit of olive oil, three to four minutes per side until crispy; for softer ones just warm through until the cheese melts on both sides.
  • shawarma sauce
Cut into fours and use them to scoop up the salad, or fold them in half with the salad inside like a taco, with shawarma sauce or sour cream.
