Ingredients
Method
Techniques
  • oil
  • onions
Heat a little oil in two pans. Caramelize food-processor-chopped onions slowly in one.
  • kosher salt
  • pepper
Brown the ground beef in the other, breaking it up finely; season with kosher salt and pepper and stop while slightly pink, since it finishes in the oven. Both can be done a day ahead.
  • 1 whole pickle
  • ½ cup mayo
  • 1 tbsp ketchup
  • mustard
  • sriracha
  • salt
  • fresh ground black pepper
Finely dice a pickle and mix with mayo, ketchup, mustard, sriracha, salt and black pepper for the sauce.
Give the onions about five more minutes.
  • store-bought dough
Rest the dough in a well-oiled Detroit-style pan about an hour and a half so the gluten relaxes, then stretch it into the corners; cold dough needs two to three hours out of the fridge.
  • 1 block block of American cheese
Grate the block of American cheese.
  • ¾ lb ground beef
Top the dough with the sauce, then the cheese all the way to the edges, then the ground beef, then the onions.
Building the pizza
Bake at 500 degrees for 15 to 20 minutes.
  • lettuce
  • tomato
Loosen the edges, turn out, top with lettuce and tomato and cut.
