Techniques
  • 200 g pasta
  • olive oil
  • 2 cloves cloves of garlic
  • parsley
  • ½ lemon lemon juice
  • basil leaves
  • mint
Press two cloves of garlic into the olive oil; roughly chop the parsley; squeeze the juice of half a lemon; keep basil and mint leaves whole until the last moment.
  • salt
  • pepper
Warm the garlic oil on medium heat about 20 seconds, turn off the heat and add a layer of salt and pepper.
  • water
Boil the pappardelle in plenty of well salted water until al dente.
Drain and put straight into the garlic oil; mix gently to coat so they do not stick, and leave to sit.
Dressing: whisk pepper, salt and the lemon juice until the salt dissolves; add the parsley, basil and mint and mix.
Add the pasta to the herb mixture and keep tossing like a salad.
  • extra olive oil
  • lemon zest
  • parmesan
Finish with a little salt and pepper, a drizzle of olive oil and grated lemon zest; add a squeeze of lemon if dry, toss again and serve with shavings of parmesan.
