Techniques
  • 1 cup red dragon fruit puree
  • 1 cup Greek yogurt
  • 1 cup heavy cream
  • ½ cup white sugar
  • ½ cup coconut palm sugar
  • ½ cup sugar
  • ¼ cup melted butter
  • ¼ cup chia seeds
  • 2 tbsp all purpose flour
  • 2 tbsp honey
Peel the red dragon fruit and cut it down; reserve some for garnish and blend the rest to a puree.
Pour the puree into a mixing bowl and mix in the Greek yogurt, heavy cream, white sugar and coconut palm sugar.
Mixing the frozen yogurt base
  • heavy cream
Churn in an ice cream machine; blend in a bit more heavy cream to thin the base if the machine struggles.
Churning and setting
Transfer to a container, cover with plastic and freeze about an hour to set up.
  • 1 whole whole egg
  • milk
  • salt
Whisk the egg, sugar, melted butter, chia seeds, a splash of milk, flour, a pinch of salt and the honey until it comes together.
Ladle the batter into a preheated waffle cone machine and cook until deep golden brown.
Cooking and molding the cups
Remove carefully and mold around or into a small bowl to make a cup shape; repeat.
  • frozen dragon fruit balls
  • lemon verbena
Scoop the froyo into the cups, or pipe it in from a pastry bag with a fluted tip; garnish with frozen balled dragon fruit and lemon verbena or mint.
