Ingredients
Method
Techniques
- 3 cup southern magnolia flower petals
- 1 pod fresh vanilla bean
- 3 cup cream
- 1 cup evaporated milk
- ½ cup sugar
Pick the petals off the magnolia blossoms, leaving out the centre bud, and rinse them under water to remove dirt and bugs.
Cleaning the petals
Scrape the seeds out of a split vanilla bean.
Building the base: vanilla, cream and evaporated milk
Over medium heat, add the cream, evaporated milk, sugar, vanilla bean and seeds, and the magnolia petals; stir to combine.
Bring to about 140 to 150F, just before a simmer, with some steam coming off, to soften the petals and draw flavour from the vanilla and magnolia.
Chill the base in the freezer about an hour and a half to about 40F, no lower than 35 to 36F, without letting it freeze.
Chilling the base before churning
Churn in the ice cream machine, then freeze to set at least 1 to 2 hours depending on the freezer.
