Techniques
  • 14 oz beef
  • ⅓ tsp salt
Slice the beef 1/5 inch thick. Mix with the salt and the egg.
  • 1 whole egg
  • 2 tsp baking powder
  • ⅔ cup cornstarch
Combine the baking powder with the cornstarch and toss with the beef, getting between every slice. Separate the pieces and rest so the starch bonds.
  • king oyster mushroom
Cut the mushroom into chunks and slice 1/5 inch thick; cut the onion into bite-sized pieces.
  • ¼ whole large sized onion
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1½ tbsp oyster sauce
  • 1 tsp dark soy sauce
  • 1 tbsp minced garlic
  • 1 tsp ginger
  • 1 tbsp black pepper
  • 1 tbsp Worcestershire sauce
Mix the sauce: soy sauce, honey, oyster sauce, dark soy sauce, minced garlic, ginger, black pepper and Worcestershire sauce.
Mixing the black pepper sauce
  • cooking oil
Heat a carbon-steel frying pan on high until smoking, add enough oil to cover the bottom, and lay in the beef slices one by one in order; fry about a minute per side, in batches, adding oil as needed. Remove.
Saute the mushroom slices in the remaining oil a few minutes, cut sides down, to char them.
Add the onion and stir briefly, keeping it crunchy.
  • white rice
Pour in the sauce, return the beef, and toss until every piece is coated. Serve with white rice.
