Techniques
- 3 whole eggs
- salt
- oil
Heat oil, not butter, in a non-stick pan over high heat and pour in the eggs.
As soon as the edges bubble and set, pull them towards the centre with chopsticks so uncooked egg fills the gaps, then twirl the pan by the handle while holding the egg in the middle, creating a vortex in one direction.
Keep twisting until the egg slips away from the pan and can be turned all the way round; take it off the heat before the residual heat overcooks it.
- hot water
Dissolve hayashi cubes in hot water until thickened and pour it around the tornado like a moat.
