Ingredients
Method
Techniques
  • 440 g canned white beans
Drain the white beans into a colander, rinse under water and shake off the excess.
  • 45 g plain bread crumbs
Mash the beans in a large bowl with a potato masher or large fork until well mashed.
  • 1 whole small onion
  • 1 cloves garlic
  • 8 g chopped parsley
  • 1½ g ground cumin
  • 1 whole large egg
Add the bread crumbs, chopped onion, chopped garlic, parsley, cumin and the egg, season with sea salt and black pepper and mix.
Mixing the meatball mixture
  • sea salt
  • freshly cracked black pepper
Push down on the mixture until it is a paste, so the meatballs hold their shape and do not break apart.
Take a spoonful, squeeze it in the hand and shape it into a ball about the size of a golf ball. Add more bread crumbs if too wet, more whisked egg if too dry.
  • 60 ml extra virgin olive oil
Heat a large fry pan over medium heat with the olive oil.
Add the meatballs in a single layer, evenly spaced, and cook 8 to 10 minutes until golden all around, then remove and set aside.
  • 4 cloves garlic
In the same pan at the same heat, add the chopped garlic and mix continuously for 30 seconds to 1 minute until fragrant, without browning it.
  • 2½ g sweet smoked Spanish paprika
  • ½ g dried thyme
  • ¼ tsp crushed red pepper flakes
Add the smoked paprika, dried thyme and red pepper flakes and mix quickly, or the paprika turns bitter in the hot pan.
  • 425 g canned tomato sauce
  • 60 ml vegetable broth
Add the canned tomato sauce and the vegetable broth, season with sea salt and black pepper, and add a dash of white sugar if it is too acidic.
  • white sugar
Simmer about 5 minutes until slightly thickened.
Return the meatballs to the pan in a single layer, flip each one to coat, and simmer another 2 to 3 minutes until heated through.
  • chopped parsley
Spoon tomato sauce into a serving dish, top with the meatballs and sprinkle with chopped parsley.
