Ingredients
Method
Techniques
- 1½ lb unsalted butter
- 1 cup granulated sugar
- 1 cup powdered or confectioner sugar
- 2–3 tsp pure vanilla extract
- ½ tsp salt
Beat room temperature butter, granulated sugar, powdered sugar, vanilla and salt on low, then high, 2 to 3 minutes until creamy and fluffy, scraping the bowl.
- 6 cup all purpose flour
- 1 tsp baking soda
Whisk the flour and baking soda together and add in a few batches to the butter mixture; beat on low until a dough forms. Give it a final mix on the countertop.
Line a 9 by 13 inch baking pan with a crumpled full sheet of parchment paper.
Lining the pan and pressing the crust
- flour
Press half the dough evenly into the pan and as far up the sides as possible to hold the filling, using flour if it sticks.
- 1–2 tbsp granulated sugar
Pinch off pieces of the remaining dough and dot them over the top as a crumble; sprinkle with a tablespoon or two of granulated sugar. Trim the excess paper.
Bake at 350F about an hour and 20 to 25 minutes, until the crust and top are golden brown, the bottom crisp and the filling bubbly.
Cool to room temperature before lifting out and cutting into bars, ideally completely; or serve warm from the pan with ice cream or whipped cream.
