Techniques
  • chuck roast
Braise a whole chuck roast; the specifics are in a separate video.
  • salt
After six hours shred the beef, season with salt and let it cool a little.
  • 2 spoonfuls braising juices
  • sesame seed bun
  • carrot ginger slaw
Bag the braised beef with a couple of spoonfuls of the juices, spread it very thin, score perforation lines and freeze.
  • Japanese barbecue sauce
  • sriracha mayo
Set a pan over medium heat and put a frozen portion of the beef straight in; let the fat melt and the beef crisp.
Cook one side, flip, then break it up and crisp two to three minutes more.
Coat the beef with Japanese barbecue sauce.
Toast the buns and spread sriracha mayo on both sides.
Build with carrot ginger slaw on the bottom, the beef over it, a drizzle more spicy mayo, then the top half of the bun.
