Method
Techniques
  • 1½ cup milk
  • 6 tbsp melted butter
  • 1½ tsp salt
  • 1 whole egg
Warm the milk to about 110 degrees, then mix in the melted butter, salt and egg.
Warm milk mixture
  • 5 cup all purpose flour
  • ½ cup sugar
  • 2¼ tsp instant yeast
Combine the flour, sugar and instant yeast in a large bowl, then pour in the milk mixture and mix by hand.
Add a little more warm milk if there are dry spots; the dough should be sticky.
  • warm milk
Rest the dough three minutes, then flip it out and knead three minutes until it no longer sticks to your hands and is elastic.
Roll into a ball, grease the bowl and the top of the dough, cover with plastic wrap and a kitchen towel and rise in a warm spot until doubled, 45 minutes to an hour.
Knock the air out and divide into even balls on a scale, keeping the rest covered so it does not dry out.
Close each piece in on itself and roll it into a smooth ball, then set it on the baking sheet.
Cover again and rise in the warm spot until doubled, 30 to 45 minutes.
Bake at 350 degrees for 25 minutes.
  • 1 stick butter
  • 3 tbsp powdered sugar
For the honey butter, beat the room temperature stick of butter with the powdered sugar until creamy and smooth.
  • ¼ cup honey
  • 1 tsp ground cinnamon
  • ¼ tsp salt
Add the honey, ground cinnamon and salt and mix until combined. Taste and add more honey if wanted.
  • melted butter
Brush the rolls with melted butter as they come out of the oven and rest a few minutes before serving with the honey butter.
