Method
Techniques
- 24 whole chicken tenders
- salt
- black pepper
- all purpose flour
Pat the chicken tenders dry, season both sides lightly with salt and pepper, and dredge lightly in all-purpose flour.
- 3–4 cup panko breadcrumbs
- 1–2 tsp dried oregano or thyme
- 1–2 tbsp granulated garlic powder
- crushed red pepper flakes
- parmesan cheese
Toss the panko with oregano or thyme, salt, pepper, garlic powder, optional red pepper flakes and parmesan; add more panko and seasoning if needed.
Parmesan panko coating
- ½ cup mayo
- 1 tbsp sugar
- 2 tbsp white vinegar
- black pepper
- coleslaw
Whisk the mayo, sugar, white vinegar and black pepper for the coleslaw dressing; toss with the shredded cabbage mix when ready to serve.
Coleslaw dressing
- ½ cup mayo
- 2 tbsp honey
- 2 tbsp yellow mustard
- ¼ cup barbecue sauce
- 1 tbsp white vinegar
Whisk mayo, honey, yellow mustard, barbecue sauce and white vinegar until smooth for the sauce; it keeps in the fridge for days.
Chick-fil-A style sauce
- 3–4 whole eggs
- ½ cup whole milk
Whisk the eggs and milk in a pie pan and season with salt and pepper.
Egg wash and heating the oil
- light olive oil
Heat light olive oil in a large skillet over medium high to 360 to 370F, not high heat or the crumbs over-brown before the chicken cooks.
Dip each floured tender in the egg, then roll it in the breadcrumb mixture until well coated.
- frozen corn
- butter
Fry about three minutes per side until golden and the chicken feels light when lifted; drain on a tray lined with paper towels.
Warm the corn in a saucepan with butter, salt and pepper until steaming hot.
Buttered corn and tater tots
- 1 bag store-bought tater tots
- tortilla
Cook the frozen tater tots in the air fryer with salt and red pepper flakes until golden and crispy.
- cheddar cheese
- pickles
For a wrap, warm a tortilla, add a little cheddar, the chicken, sauce, pickles and coleslaw; warm about a minute over medium to melt the cheese, then wrap.
