Ingredients
Method
Techniques
- ¾ cup warm milk
- 4 cup all-purpose flour
- ½ cup sugar
- salt
- 1 tbsp instant yeast
In the stand mixer bowl combine the flour, sugar, a pinch of salt, the instant yeast and the unsalted butter; mix.
Mixing the sweet roll dough
- 6 tbsp unsalted butter
- 2 whole eggs
- 2 tsp vanilla extract
Add the eggs and vanilla, then slowly the warm milk. Once incorporated, mix on medium for 10 minutes to a soft dough.
- butter
Roll into a ball, put in a greased bowl, rub a little butter on top, cover with plastic wrap and a kitchen towel and leave somewhere warm to double in size.
- 20 whole chopped strawberries
- ¾ cup sugar
- ¼ whole lemon
Jam: in a saucepan combine the chopped strawberries, the sugar and the juice of a quarter lemon over medium heat until the sugar dissolves.
Raise to medium-high, bring to a rolling boil and stir constantly until thickened, about 10 minutes. Transfer to a jar and cool completely.
Press the risen dough down to remove the air, flip, and stretch into a large rectangle about a quarter inch thick.
Rolling out and filling
- 1 stick butter
- 1½ cup brown sugar
Spread with the room-temperature butter, pack on the brown sugar evenly, then spread the jam.
Roll into a log, trim the ends, and cut into about eight even rolls by halving repeatedly.
Place in a greased baking dish, cover with plastic wrap and a towel, and let double again in a warm spot.
- 4 tbsp butter
- 4 oz cream cheese
- ½ cup powdered sugar
- 1 tsp vanilla extract
Icing: beat the softened butter and cream cheese together, mix in the powdered sugar, then the vanilla.
